We picked up some clementines recently and decided to tray dehydrating a few. The result was interesting. Citrus fruits are mostly water, so you really don't have a lot left when you take the water out. The slices were crisp on the outside and soft on the inside with an intense orange flavor. Interestingly, dried clementine slices are quite good with the skin on. The skin provides a surprising amount of flavor and was not bitter.
