Kale Chips with Cashews & Dried Tomatoes

Kale Chips with Cashews and Dehydrated Tomatoes

This is a tasty kale chips recipe that makes good use of tomatoes you have previously dehydrated. The resulting kale chips have a delicious tomato tang, with the satisfying nutty crunch of cashews. One of our favorite kale chips recipes.

Ingredients: 

1 bunch Kale
15 grams dehydrated tomatoes or Sun Dried tomatoes
1/2 cup raw cashews
2 large garlic cloves
1/2 cup water used to soak tomatoes
1 tablespoon fresh lemon juice
1 tablespoon nutritional yeast
1/4 teaspoon sea salt

Directions: 
  • Soak dehydrated tomatoes and cashews in water for at least 1 hour, in separate bowls
  • Reserve the water used to soak tomatoes and set aside
  • Drain cashews
  • Wash kale leaves and tear into pieces, discarding stems. Dry the leaves in a salad spinner
  • Place kale into a large bowl
  • In a food processor, with the machine running, drop in the garlic and process until minced. Add rest of the ingredients except the salt
  • Process until smooth, scraping sides as necessary, and add salt slowly to taste
  • Pour the sauce on top of the kale and stir with a spatula, until evenly coated
  • Place kale on dehydrating trays
  • Dehydrate for about 2-4 hours at 135° F, or 4-6 hours at 115° F (for raw) until crispy
Step 1 -  Wash kale leaves and tear into pieces, discarding stems. Dry in salad spinner
Step 2 - Soak dehydrated tomatoes and cashews in water and measure out other ingredients
Step 3 - In a food processor, mince garlic, add rest and process unti smooth
Step 4 - Place on coated kale on dehydrator trays
Step 5 -  Done!. Crispy Kale chips!

Not sure if ill get "raw" chips if dryer at 135*?

Hi Tom, Generally, raw foodists think the max temperature to keep food "raw" is about 115 to 120 F. We have a bit more information on this topic here: http://www.dehydratorreview.net/articles/raw-foods-and-food-dehydrators

I'm making this now and the consistency is like marzipan or paste, not a sauce. Did you put some of the tomato water in? How much?

This was my first time making kale chips and they were delicious! About adding the water from the tomatoes, i did add it little by little until the consistency more or less matched the picture. Mine was a little thinner i think. I figure it doesnt really matter as long as its thick enough to stick to the kale. All of the water evaporates in the dehydrator anyway. I reduced the salt because i used sundried tomatoes from the store and they were already salted. Next time i will add some cayenne to the recipe because we love spicy. Thanks for this great recipe! Two thumbs up.
